Sandy Ridge News: Ruritans continue fundraiser for scholarships

Sandy Ridge Ruritans will be selling Mrs. Pumpkin’s pies and desserts through Feb. 23. The delivery date will be March 5 at 2 pm at the Community Center.

This is an annual fundraiser for high school scholarships. If you want to place an order, please contact me or any Ruritan member.

You can choose from 9-inch Moravian Chicken Pie, 9-inch Chicken Pot Pie with Vegetables, Baked Spaghetti, Vegetarian Baked Spaghetti, 4-pack of 5-inch Mini Chicken Pies or 1 dozen Cream Cheese Brownies.

Mark your calendar and spread the word – Bingo will resume March 19. If you have a donation for a bingo or door prize, please let me know.

Also, we need a good turn-out for the Blood Drive scheduled for April 9 at the Sandy Ridge Community Center.

TRIED AND TASTED RECIPE:

Double Chocolate Pie

1½ cups cold milk, divided (or fat-free)

1 pkg. instant chocolate fudge pudding mix (or sugar-free)

1 carton (8 oz.) frozen whipped topping, thawed, divided (or fat-free)

1 8” graham cracker crust (or reduced-fat)

1 pkg. instant white chocolate or vanilla pudding mix (or sugar-free)

Semisweet chocolate curls and shavings, optional

In a bowl, whisk ¾ cup milk and chocolate pudding mix for two minutes or until thickened. Fold in 1¾ cups whipped topping. Spread into crust. In another bowl, whisk the remaining milk and the white chocolate pudding mix for two minutes or until thickened. Fold in remaining whipped topping spread over chocolate layer.

Refrigerate for four hours or until set. Garnish with chocolate curls, if desired.
